Yes, I know…nominating a best taco in the world is a stupid idea but hey..this is Substack so I can do what I want.
The candidates were always going to be in Los Angeles or Mexico and even though LA used to be part of Mexico, I feel like I need to go with Mexico.
Then the choice is for the best taco city. The obvious choice is Mexico City but…I am going with Tijuana and the reason is you can try all the taco styles across Mexico in only one city. Mexico City is an awesome Taco city - but the city has mostly MC tacos. In Tijuana - aspiring immigrants from all over the country congregate in the border crossing for a variety of family and immigration issues. Generally speaking, you can find as good or better regional tacos from the 8 regions of Mexico in Tijuana.
Ok - great now the tough one - the best taco in Tijuana? The best from each of the 8 regions I will publish later…but for now..I am going with a local taco from Tijuana. Fitos
.The “Campechana” is a classic Tijuana beef birria taco with grilled tripe (intestines sauced In a magic move like no other which can be admired in the video below:
This taco is based on the classic red beef “birria” from Tijuana where the tortilla is dragged through the red broth (the source of the famous “Teddy’s Red” in LA) this is then turned into Campechana by adding the tripe: Here it is in all it’s glory:
